We took Alison’s bean to bar chocolate making course and made our first chocolate this weekend.

I think I toasted the beans a bit too far (ie lightly burnt a few). Oops! Shelling the beans was great fun and the whole family loved trying to get perfect beans out and nibbling on the crumbled ones. Then we all tried some cacao husk tea! Yummy!

Grinding the beans went very well - the trickiest part was keeping little fingers out of the chocolate as it was melting.

And Oh. My. Goodness the chocolate was delicious!

I won’t be able to go back to store-bought chocolate. The homemade chocolate with Criollo beans had such a complexity and fruitiness and the home grinding gives it a more interesting texture.

And we worked out that if we buy the beans in bulk, it’s cheaper than our store bought chocolate

We are already deciding what toppings we will put in/on the chocolate next time.

Really enjoyed this course. The instructions are easy to follow and making chocolate is so satisfying and fun! Thanks Alison for your quick response and helpful advice when, me being me, I managed to go wrong. I can now make lovely chocolate and eat it guilt free every day. Highly recommend the courses on Ancestral Kitchen!

I am a “connoisseur” of dark chocolate and spend lots of money trying different brands. So I was so happy to see Alison offering this reasonably priced and simple to follow course on making my own chocolate. I purchased beans from the company she recommends and I’m so happy with my first batch. A fruity flavor too. I highly recommend this course to anyone who loves chocolate and wants to learn a new skill in their kitchen. Saving me lots of money in the long run.
