Hi Lizzy,

I'm really glad you enjoyed this post. Definitely make the dish. It is just unlike anything else and can be turned so many ways with different variations. I'm sure you and your family will love it!

This is so interesting. I have seen, especially lately pasta cooked in with other ingredients and the starches help make a creamy sauce.
Oats sits at the top for making this kind of creaminess. You don’t even need cheese or any sort of dairy to do this with oats if you avoid dairy products. I love that you not only delved into some beautiful history in this oat gnocchi but that you highlighted a concept that flour isn’t just flour but it’s something that depending on the grain brings a Flavor and texture unique to itself plus individual health benefits. Thank you for sharing, needless to say this is on my list to master, my family loves oat anything.

You could try mixing it with a ratatouille instead.

I would love to try this, but since I don’t eat meat or dairy, is there another thing I could add to the sauce besides bacon and cheese and have it still be yummy?

The historical context here makes the recipe so much more compelling. The idea that perfectly smooth porridge was the expected standard and these little oat dumplings were almost an outlier is such a nice detail to come across. I had no idea oat dough could develop a texture like that when simmered. The bacon and mushroom sauce combination sounds like exactly the kind of thing that would turn skeptics of the whole oat gnocchi concept into immediate converts.
