Hi Rosie,

Thanks so much for letting me know that you love these cookies. My son makes them almost every week and he'd agree! Such a great idea to roll out the dough and use a cutter, making a big batch, I can see that would be much easier. Enjoy!

These are so good! Thank you for making the cookie I've been craving. Not too sweet, perfect for a quick snack without feeling overly indulgent. I did use a little bit extra chocolate chips but left off the topping. Also, just a splash of vinegar with milk instead of kefir. So good! They reminded me of chips ahoy, but wayyy better! I'm so excited about this recipe.

One more thing, I had made a triple batch, so part of the way through I tired of shaping them. I quickly rolled the remaining dough onto parchment and used a 2¾" circle cutter to cut out the cookies. So easy, and they looked so lovely.

And sheep milk yogurt with a bit of raw milk added to simulate a kefir worked well for me.

I did want to correct my comment in case someone tried adding eggs. The first time I made these cookies I can’t remember if I added 1 or 2 eggs & I did yogurt mixed with a little water (instead of Kiefer). The 2nd time I made them I added 2 eggs and just milk and they came out cakey consistency (which I don’t mind). The first time they did come out pretty close to regular cookie texture so I’m assuming I used 1 egg. This recipe also produces a small batch of cookies so 1 egg should suffice! I will be trying again with 1 egg & yogurt with water mixture because this might have played a part in the texture.

Brilliant, thanks for letting me know Tia. It's interesting about the eggs...I've not tried them in the mix. Enjoy :-)

I have been looking for a low sugar cookie recipe for years now & finally found one! I’ve made these twice now & they are soo yummy. I did milk instead of kiefer and added 2 eggs and the cookies turned out light and airy (chewy). The brown sugar on top is delightful. Thank you for this low sugar recipe Alison.
