Hi Joan! I'm sure you will love the loaf. Yes I think it would work in a pullman pan with a slide-on lid. Just make sure you use a pan big enough to be able to handle the rise that the loaf will give you. You could also put another loaf pan upside down on top of the one holding the dough, yes. As a last resort, using foil on the top of a single loaf pan will work too.

I love sesame seeds in this too. I'm glad you enjoyed! The loaf looks good but the sinking at the top probably indicates that it was proofed a bit too much before it went into the oven. It won't rise a great deal more as it's 100% wholegrain, but if you can get it in the oven a little earlier next time, it'll probably rise more (like the loaf in my picture).

I have just finished making this recipe. I replaced the sunflower seeds with black sesame seeds. It’s absolutely delicious! I used a 2lb ceramic bread pan and followed the directions exactly. I was hoping it would rise higher than it did. I’m sending a picture of the finished loaf. Tell me if this looks right.

Hi Lois,

Do let me know how you like it. I have lots of resources on Spelt too, an ecookbook and a episode of my show, Ancestral Kitchen Podcast dedicated to it here: https://ancestralkitchenpodcast.com/2023/12/72-all-about-spelt-sourdough/

I am thrilled to have your information about the character of these ancient grains and how to bake with them. I have been added a % of Emmer or Einkorn for while now, but added to conventional whole wheat or all purpose flour sourdough. At this point, I have not used spelt in our breads. I do use preferments, but now I plan to follow your recipe and make a bread completely with emmer. Thank you so much for the fascinating discussion.
