Thanks for sharing this. I remember seeing a recipe for millet cooked with pumpkin in Dara Goldstein's Beyond the North Wind book (which I love). I've yet to try it. The bread looks interesting. It's mostly oats, I see. I might give it a go. Thank you!

Millet has been my grain of choice for decades! I look forward to trying some of your ideas. A favorite of ours is to cook plain millet, as in your first recipe, but to add chopped root vegetable at the beginning. Sweet potato is wonderful, carrot also yummy.
I’ve also been making a bread using soaked millet and buckwheat, which are ground up with oats and a few other ingredients and baked. (Amy Chaplin’s recipe).

Thank you! My husband and I both have health issues that require healthy diets. Our son, a gout sufferer will be coming to help us for awhile and millet looks like a perfect way to enhance our diet in ways that will benefit all three of us

"Loved this post! I’ve been using millet in pilafs for years but never thought to turn it into fritters or use it in desserts. Your creativity is inspiring—more millet ideas, please!"
