Theoretically you can reuse lard any number of times for deep-fat frying. But you must be careful not to overheat the lard as it was become oxidised. It has a smoke point of 188C/370F, so if you keep it solidly below that you should !e good. And yes, do strain it.]]></description>

					<description><![CDATA[Good on you, as we say in New Zealand and Australia. When I was a kid toast with “dripping” (probably beef fat from roasting) was a nice snack. Somehow we didn’t have a lard tradition but our pigs were always over fat to that was a lost trick.
I am a fairly recent convert to using lard. I stated to my partner this evening that I’d be using lard to make carrot cake to take out to my cousin&#039;s farm this weekend when I go out to help with docking some lambs (you might have to look that up). Her shock was amusing. I’m looking forward to it.]]></description>
